Crunchy Jumbles


I sat and wrapped my cards I had made over the last week while watching the Apprentice last night, and I made 35 - now I want to make some more ....but have got a block - I need some inspiration.

Well another blog featuring baking - one day I might get myself organised and start baking for the Country Markets...need to go on a food hygeine course first.

So today I have made some cookies - you get loads out of this...and they must be fairly light as they are full of rice krispies!

Crunchy Jumbles
115g 4oz Butter or Marg
225g 8oz sugar
1 egg
1tsp vanilla essence
175g 6oz plain flour
1/2 tspn bicarb of soda
115g 4oz of crisped rice (probably 3 oz would do)
100g 4oz choc chips

beat fat and sugar together, add the egg. Then fold in the sifted flour and bicarb...lastly add the cereal and choc chips..until mixed in

drop spoonfuls of the dough onto baking sheets - we made 25 the recipe says 36 so I guess it depends how big you want them

Cook 180c 350f Gas 4 for 12 - 15 minutes....use a spatula to transfer to a cooling rack...lovely - tested by Owen and they are good!

Once the BIG challenge is over I will do a Rubber Stamp challenge - if anyone fancies hosting a challenge - that would be great - make a change from my style. I have some nice freebies to give away as well.....

Yummy, they look good, I'll think I'll make some for my big kid, my boyfriend, ha ha, he is a total cookie monster and his sweet tooth is appalling, so he'll love them.

Plus congrats on the cards in the shop, fingers crossed all goes well!!!
