Peanut butter choc chip cookies


I saw this recipe in April's Delicious and decided to give it a go with out the topping, this brought the price down for Ampthill Country Market Stall...have to say they were delicious!

They are actually entitled Chocolate Peanut Crumble Cookies in the mag
Makes 15 they will keep for 4 days, or can be frozen

115g salted butter
115g caster sugar
1 heaped tablespoon of smooth peanut butter
1 large egg
150g Plain flour
30g cocoa
½ teaspoon bicarb soda
100g plain choc chips

oven at 190c/fan170c/gas 5
cream butter sugar and peanut butter together, add the egg. sift flour, cocoa and bicarb, fold in then add choc chips. roll into 15 balls and squash down. Bake for 10 - 12 minutes, leave to cool for a few mniutes before transfering to a cooling rack.

Now the recipe suggested adding a topping:
30g salted butter
40g plain flour
30g caster sugar
rub together and then add
60g unsalted peanuts, half roughly chopped.
...you then add this to the top of each cookie before cooking.

AND then they suggest drizzling 50g melted white chocolate over them when they have cooled

...sadly I didn't do either - but they were yummy anyway...

I used block chocolate at room temperature roughly chopped

Well it is the end of the Easter Weekend - back to work for me tomorrow - although only doing a one day week as I have Friday off! I have not crafted or cooked today - just been doing some tidying. I have sorted a lot of Owen's room out today and given it a good clean ..... I did have a special suit on before I entered!!! We still have some areas to clear out - he has so much stuff that he just isn't interested in, and there is a nearly new sale on in Maulden in a few weeks time - so thought it was a good time to make the effort to have a clear out
