Today I made some cookies, I bought a book "The Great Big Cookie Book" - so I popped out and bought some porridge oats at 49p...and made these:
Chocolate Chip Oat Biscuits
115gm - 4oz butter or margarine
115gm - 4oz caster sugar
90gm - 3 ½oz soft brown sugar
1 egg
½ teaspoon vanilla Essence
115gm - 4oz Plain Flour
2.5ml - ½ teaspoon Bicarb of Soda
1.5ml - ¼ teaspoon Baking powder
pinch of salt
75gm - 3oz rolled oats
155gm - 6oz plain chocolate chips
Beat together the fat and sugar, add the egg until light and fluffy. Seive the flour, powder, soda and salt and add to the mix, slowly beat in. Stir in the rolled oats and choclate chips. I actually didn't have enough chips so added sultanas as I thoguht they were more healthy too! Put little teaspoon heaps on a baking sheet. I made 27 out of this...it said it made 60 - but they would have been tiny! Mine came out about normal biscuit size.
Bake for 15 mins on preheated 180C/350F/Gas 4. Take out of oven and use a spatula to transfer to a baking sheet while still hot.
Mine have been tested and Owen said they were nice!
I met Sue for a lovely lunch in the Beefeater pub at Clophill. We brought our CJ's to look through and they are so much better in the flesh. She has also lent me some stamps and has challenged me to use them...they are certainly going to be a challenge - looking forward to spending some time playing.
